Antigua Chow

We started off 2025 with an Antigua Chow by Chef Andrea George.





Caribbean Fish Slider 

Andrea’s fish slider was the fan favorite at Chow á la Carte’s Sliderfest. She coats whiting with her Caribbean Ginger Mango Rub before coating in cornmeal and deep-frying. She tops her slider with lettuce, onion, tomato, and a lemon dill aioli infused with beer from  Atlantucky Brewing. Vegan Option: Homemade Black Bean Burger Gluten-Free Option: Caribbean Fish Lettuce Wrap 


Caribbean Pumpkin Soup 

Pumpkin is popular year-round in Antigua and there are a number of popular types of pumpkin soups. Andrea will warm our tummies with her rich and creamy pumpkin soup topped with pepitas (pumpkin seeds) and peppers. Gluten-free. Vegan Option: Coconut Milk-based Pumpkin Soup


Pineapple Salad

Pineapples are so important to Antiguan culture that there’s even one on their coat of arms. Their most prized variety, the black pineapple, is only grown in Antigua and is said to be the world’s sweetest. However, due to its rarity and high cost, Andrea will opt for a more widely available variety. In this refreshing salad, the crispness of cucumbers, the sharpness of red onions, and the brightness of citrus complement the pineapple’s natural sweetness and tang.

Stewed Chicken with Rice and Pigeon Peas

Stewed chicken is a beloved dish in Antigua, deeply rooted in the island’s culinary traditions. It’s a hearty, flavorful stew that combines caramelized chicken with a sauce of coconut milk, onion, garlic, red pepper, green pepper, thyme, and tomato paste. The stewed chicken is paired with a Caribbean favorite, Rice and Peas. This dish, which comes from the Akan tribe from Africa’s Ivory Coast and Ghana, features a small, oval legume called gungo, or pigeon peas. A tossed green salad with pomegranate vinaigrette compliments this dish.  Gluten-free. Vegan option: Stewed jackfruit, Rice and Pigeon Peas, and Salad.  


Mango Cheesecake

Each year, the Antigua Ministry of Agriculture hosts PiAngo Fest to celebrate pineapples, mangos, and all the products that are made from them. Inspired by this festival, Andrea is celebrating the mango with her own cheesecake recipe. Gluten-free, Vegan Option: Mango Sorbet
